Biography
Ahmed S. Zahran serves as Director of the Quality Assurance Unit and previously held the role of Vice President at Minia University, Egypt. He is Professor of Food Microbiology at Minia University and earned his degree from the University of Edinburgh (UK), Department of Microbiology. His research focuses on probiotic and functional foods.
Prof. Zahran has authored more than 80 scientific publications covering bacterial enzymes, probiotic and functional foods, and antibacterial compounds derived from lactic acid bacteria. His work centers on evaluating probiotic products and advancing their quality. He has supervised 30 graduate students in food microbiology, microbial biochemistry, and synbiotic foods.
He has participated in the 2015, 2017, 2019, and 2022 editions of the Agriculture and Food conference in Elenite/Burgas.
In teaching, he delivers courses for both undergraduate and postgraduate students, including fermentation technology and biochemistry, microbial enzymes, food poisoning, and probiotic foods.
