INFLUENCE OF EXTRACTION PARAMETERS ON ANTIOXIDANT COMPOUNDS RECOVERY FROM ELDERBERRY

Streszczenie: The aim of this research was the optimization of parameters of elderberry fruit extraction to obtain the extracts with high antioxidant activity. Extraction was conducted at room temperature with ethanol as solvent used at different concentrations (40, 50 or 60%). The time of solvent contact with elderberry fruit was 4, 8, or 12 hours. Antioxidant activity and total content of polyphenols were determined by colorimetric methods in the obtained extracts. The 8-h extraction with 60% ethanol was found to be the best process parameters, which allowed obtaining the highest antioxidant activity from that fruit. Meanwhile, the total polyphenols content increased as process duration and ethanol concentration rose.
