AMYLOLYTIC LACTIC ACID BACTERIA AND THEIR INDUSTRIAL APPLICATION

Rezumat: The ability to destroy the starch and to convert it directly into lactic acid is desirable and rare feature of the lactic acid bacteria. Known as amylases – deficient, very few amylolytic lactic acid bacteria are reported until now. The amylolytic lactic acid bacteria (ALAB) may have important industrial applications. At first, they could be used in advanced biotechnologies for production of lactic acid, a monomer in biodegradable plastics and intermediate in the synthesis of high-volume oxygenated chemicals. Based on such a cheap and renewable source as the waste agricultural biomass (with 3.5 billion tones annual yield), and because of their capability to convert the starch into lactic acid in a single step of fermentation, ALAB made the bio-based lactic acid synthesis profitable and economically efficient. The second ALAB application consists in their use by the food industry. Producing predominantly the human – assimilated L (+) stereoisomer of lactic acid, they are irreplaceable starters for cereal-based foods and beverages. Due to the probiotic properties of many of them, ALAB may be widely used in the functional foods and drinks development.
