Abstract: Amino acid composition of protein in 19 sorts of peanuts, widen in Ukraine is qualitatively determined. Amino acid score (AS), divergence coefficient of amino acid score (DCAAS) and biological value (BV) for the given sorts are calculated. Glutamic acid and arginine prevails in amino acid composition of peanuts. It is shown that proteins of peanuts are characterized by low content of methionine and cysteine. The sorts with the highest biological value of protein are determined.
