Abstract: In a changing climate physiological and biochemical regularities of the formation of the sustainability of varieties of grape of different ecologo - geographical origin to the stress of the winter period in the South of Russia were identified. A parametric characterization of varieties of grape differing in resistance to low temperatures on the second and third components of hardiness were given.
